What do you do?


What do you do with an abundance of Zucchini? We have given it away, made bread (and given that away), froze some bread, steamed it, fried it, put in pancakes and muffins. What else is there? I am so out of ideas.

I had a roommate that would make a chocolate zucchini cake. I can probably get the recipe from her if you'd like to try it. I thought it tasted good.

This year I'm trying shredding the zucchini into recipe sized baggies and freezing them. So in a few months I suppose, if you are up for eating zucchini baked goods again, there's your ticket.

A friend brought us a chocolate zucchini bread and it was awesome. I'm going to ask for the recipe and I'll pass it along. I have also seen (I think from allrecipes.com) zucchini brownies and they were ok.
